I am wanting to plant an evergreen hedge along the inside top of an old stone retaining wall.The wall falls away by 2.5m at the back of the garden to the lane below. Can anyone recommend something with a shallow or vertical root system that will not damage the wall over time?

Depends how tall you wish your hedge to be ultimately.
Regular pruning of the growing parts of a shrub also maintains root size so there are many shrubs that would fit the bill
Ligustrum (privet) is semi evergreen and is easy to maintain. Photinia red robin would do also but needs regular pruning (in the same way as laurel) to maintain a lower hedge. Escallonia iveyi makes a nice hedge but takes time and there is also the old favourite buxus (Box) but this is best suited to a lower hedge as it also takes ages to establish.
Any hedging style plant, without regular maintainance would have the potential to damage your wall, but if you are planting around 1m behind the wall and keeping the hedge at between 6-10ft you should be ok.
The climber idea is also a good one.

I am planting a low hedge, probably growing to 4 feet, of Ilex Golden King to try and keep dogs from fouling at the road end of garden. Would I be correct in believing the tough shiny leaves will also be somewhat pee proof? My question is What space to have between plants please?
