Planted my apple tree 3 weeks ago and seems to be doing ok but I noticed that a few of the leaves have a silver colour to them. I can't see any pests but was curious if this was something to be concerned about

I have an Elstar Apple tree and it is loaded with apples to the extent that the tree is bending over. My question is: when will the fruit be ready for picking and how do you know when the fruit is ripe?

We have two Elstar apples trees - they have lots of fruit coming up on them, but some of the fruit looks shrivelled and wrinkly where as some of it still looks firm - should I remove the wrinkly ones?
