My Chaenomeles struggles to grow well & thicken out although I get quite a few flowers. It is planted on an east facing wall in sandy loam - neutral to acid. Advice on when and how to feed would be appreciated if this might be the problem. Also, what to mulch it with.

Sounds like the soil is right, and it must be somewhat happy to flower so well. How much light does it get? It likes full sun, easily tolerates partial shade - is it getting too little light? You can feed with a fertilizer high in nitrogen after flowering to encourage more leaf production.
