Most plants set seed after flowering, as the flowers go over. Do you want to know when to collect or when to plant seeds you have collected? Most plants that grow well in Britain would be happy to be sown in the next few weeks - as the spring starts up. If you have space to do things under cover, you can try sooner. If you're trying to put things in the ground it's worth waiting a few weeks until the frost is properly past.
