Does it have lots of flowers on each stem? If so, the later ones might last a bit longer if you cut off the earlier ones as they fade. Lots of people leave the heads to set seed (but some of the new varieties of sunflower don't make seeds at all). The reason for deadheading anything is to stop a plant putting energy into seeds that you want it to put into more flowers or into underground crops or into foliage. As sunflower is an annual, people usually let it finish its job, make seeds and die back before tidying it up.
