Yet again, after years of trying, I have beautiful beetroot leaves but no beetroots! Can I eat the leaves?

Yes you can. The young ones are best in salads. Yum.

Beet greens are wonderful things! Not only are they good in salads, but you can also cook them as a vegetable. I like to use a little bacon for flavoring, plus garlic, onion, and hot chiles, braised in water and salted to taste. As for the roots, the biggest culprit in not getting root vegetables is the soil condition and the second-biggest is fertilizer. I assume you've checked both?
