E. agavifolium is a rosette-forming, evergreen perennial with spiny, glossy, sword-shaped, deep green leaves and, in summer, branched stems bearing pale green to white, cylindrical flowerheads surrounded by spiny bracts.

Other names: Eryngium decaisneanum, Giant sea holly
E. pandanifolium is a vigorous, clump-forming, evergreen perennial with large, linear to sword-shaped, blue-green leaves with spiny margins. Tall, branched stems bear umbels of small, ovoid, purple to purple-brown flower heads from late summer into autumn.
